BBQ Catering Portion Calculator: How Much Food Do You Really Need?
The single most common question we get from people planning catered events is some version of: “How much food do I actually need?”
Order too little and you’re the host whose guests left hungry. Order too much and you’re paying for trays that come back full. Here’s a pitmaster’s no-BS guide to BBQ catering portions, based on hundreds of events we’ve catered around Tampa Bay.
The Quick Rule
For a standard dinner, plan on:
- ½ lb cooked meat per adult
- 2 sides per adult
- 1 bun or piece of bread per adult
- 3 oz sauce per adult
Kids under 12 generally eat about half of an adult portion. So 30 adults + 10 kids = 35 “adult equivalents.”
Adjust for Meal Style

Tailgates and game-day events almost always lean toward “full meal” portions. Corporate lunches can usually run lighter.
Adjust for Meat Mix
If you’re offering two meats (say brisket + pulled pork), the total per-person stays at ½ lb — guests don’t eat double. They mix and match.
If you’re offering three meats, expect each to take a ⅓ share, so plan ~⅙ lb of each per guest.
Adjust for Side Variety
More options = bigger eyes, bigger portions. If you have 5+ sides, expect guests to take a little of everything. Bump side total up by ~25%.
Don’t Forget Sauce
For BBQ joints like ours, sauce is part of the meal — not an extra. Plan 3 oz per guest for one variety, 4–5 oz if you offer multiple.

How much brisket do I need for 50 guests? For a standard dinner: 25 lbs cooked brisket. That allows for ½ lb per adult guest. Expect ~25–35% trim/loss when buying raw, so ~32–38 lbs raw to start.
Is it cheaper to order more meats or more sides? Sides are almost always cheaper per portion than meat. If you’re tight on budget, scale meat slightly down (~⅖ lb per adult) and add an extra side variety to fill plates.
How far in advance should I book BBQ catering in Tampa? For 50+ guests, book at least 7 days out. For weddings or holiday events, 2–4 weeks is ideal. Saturday slots fill fastest.
